Last month’s SOS Kitchen Challenge, hosted by Kim from Affairs of Living and me, featured none other than everyone’s favorite invasive herb: mint! We received a wide variety of sweet and savory contributions from bloggers all around the world, and I think we truly did mint proud.
Despite the wide variety of delicious-looking soups, salads, and other savory dishes–twenty entries in all!–I must admit that, like Kim, my eyes went immediately to dessert. Kim and I are both big fans of chocolate, and this challenge certainly provided us with lots of drool-worthy recipes: Mint-Chip Ice Cream, Maca Mint Blondies, Frozen Mint Mojito Avocado Truffles, Not-So-Faux After Eights, and Coconut Milk Mint Chip Ice Cream (see links, below). Amazing!
