Fresh Blueberry-Pineapple Crumble at The Blissful Chef

Happy Monday!  Hope you all had a fabulous weekend.  Mine was filled with some surprise excitement followed by a lovely visit to the Toronto Vegetarian Food Festival, where I watched an amazing demo for Raw “Blizzards” put on by Lisa and Nicole.  What I wouldn’t give to have the energy of those two!  (And the ice cream was pretty heavenly as well). 

Well, summer here in Toronto may be “unofficially” over (don’t wear white after Labor Day, and all that), but you’d never know it by the weather over the weekend. Summer produce is still going strong, too.  We’ve had blueberries in abundance and even a fresh pineapple a week or so ago!

  • Wow, Madonna really has your cookbook?! The word is getting out, Ricki! Tell HH to watch out … one of these celebs might want to steal you to be their personal vegan dessert chef! Seriously.

  • I LOVE pineapple-blueberry crisp…such a great combo!! I have only made it once before but I must do it again soon…topped with vanilla bean ice cream = delish!

  • Thanks for the link to The Blissful Chef. I’m getting lazy in finding new sources of inspiration..gotta get that coconut sugar! Still haven’t got around to it, but then we’re going to India for 4 months in a couple of weeks and it’ll be jaggery all the way – though they should be able to make coconut sugar with the amount of coconuts they have there I’ve never seen it…

    From what I have read, coconut sugar IS jaggery! So you should be able to get a great sense of what it is and how to use it! Have a fabulous trip. 😀
