All Hail–It’s Kale! Crazy for Kale Ebook and Ten Kale Recipes

After my post on Wild About Greens the other day (and don’t forget to enter the giveaway here!), I thought I’d extend the Greens Love one more day. So today’s post is all about my very favorite leafy green in the bunch. . . KALE!

As you may remember, I’ve aimed to consume more greens each day ever since my osteopenia diagnosis way back in 2008. And it made a huge difference–just check out my progress report, here.

I was besotted with kale from the first taste back in nutrition school in 2003.  Raw, cooked, shredded, rolled, blended into a green smoothie. . . it’s all good!

That’s why I’m so delighted to take part in this launch party for the new ebook, Crazy for Kale, which I received last week. (Note: I was not compensated for this review and I am not an affiliate. I was not asked to write something positive about the ebook; the opinions here are all my own.).

While I slowly make my way back to the kitchen after the recent book marathon, I’ve been relying a lot on my old standards for most meals.  I’m thrilled that now I’ll have so much  inspiration for as many kale recipes as I desire!

Hallie Klecker, who blogs at Daily Bites, has created an entire ebook filled with kale recipes, all for $5.99. Hallie is the amazingly prolific nutritionist and chef who previously wowed us with The Pure Kitchen, Super Healthy Cookies and (as co-author with Alisa Fleming) Dairy-Free and Gluten-Free: A Whole Food Starter Guide and Cookbook.

The book contains 40 recipes, all of which are gluten- and dairy-free, 31 of which are vegan or contain vegan options. I was delighted to find so many recipes that I could make and enjoy! From smoothies and juices to salads (of course) to side dishes to main courses to snacks and (yes!) sweet treats, there’s literally something for everyone.

Here’s just a sampling of the recipes I can’t wait to try:

  • Green Breakfast Chiller (smoothie)
  • Clean and Green Juice
  • Tropical Asian Fusion Salad
  • Kale Salad with Goji Berries and Maple Roasted Almonds (I will omit the maple!)
  • Garden Pasta Toss with Creamy Horseradish Dressing
  • Kale in Almond Cream Sauce
  • Sweet Potato and Kale Balls
  • Avocado Kale Slaw
  • Mighty Minestrone Soup
  • Lemon Sesame Kale Chips
  • Lean and Green Lemonade

I could go on. . . if you love kale like I do, you’ll want to run into the kitchen and start prepping that kale! (and yes, the ebook also includes a section on different types of kale, how to prep and how to store them).
